Enter the Password ALLVID at the options screen. You will hear the "pick-up" noise, and see a notice telling you that the code was entered sucessfuly.

Enter the following at the password screen.

When all the cars are ready to race the signal light will become red then green. Press the acceleration button the moment it turns green to get a jump on the other racers.
